A super-premium deep dive into the past and future. This is a Japanese whisky journey exploring liquid history from legendary producers alongside the cutting edge of modern craft. The highlight is access to a few of my rarer drams-- high-end collector’s items, closed distilleries, and bottles that were never sold in stores and were often gifts to companies or employees of the distillery. The whole line up consists of collector’s dram that you simply cannot find in standard bars. Inclusions: 11 half-drams (10ml), highball, parting gift, chocolates Time: 90-120 minutes to enjoy a minimum of 12 drinks Best for: Enthusiasts who want to taste bottles they can’t find back home. This is not a "intro to Japanese Whisky" tasting; it is a journey through the rarest archives of Japanese whisky history. Your omakase features liquid spanning the 1960s, 70s, and 80s, highlighting long-closed ghost distilleries, historic bottlings, and highly allocated, ultra-rare modern craft releases. Your 11-drink omakase will start with a Yamazaki 25 Year Old- and then continue through to vintage and historical milestone bottles like Yamazaki, Hibiki, Hakushu, or Yoichi "firsts." Like the first Hibiki, or the first Yamazaki, and so on! We'll also cover highly allocated, limited-release bottlings from Chichibu, Kanosuke, Ikawa, and Saburomaru. Also expect a rare dram from a Japanese family-owned bourbon brand, and a highball crafted from Japan's first farm to glass distillery.
